What is it? The fruit of a cactus, sometimes known as pitaya.
What it tastes like: Either bright pink or white with crunchy little white seeds, is sweet, mild and juicy.
When you can find it: Look for dragon fruit in farmers market and roadside fruit stands during the summer.
How to store: Peel the leathery skin and slice the fruit inside. Chill until ready to serve.
Cooking tips: Combine with other fruits in fruit salad. Puree in a blender with low-fat vanilla yogurt and a little honey, then freeze to make a refreshing sorbet.
