Spice rubs at Proper Sausages

Spice rubs are easy ways to perk up neats and poultry, even vegetables. Freddy Kaufmann from Proper Sausages in Miami Shores shares the ingredients to their popular rubs:

Steak Rub: Porcini, garlic, rosemary, thyme, pepper
What makes it special: Great savory flavor and really good for any meat.

Roast Rub: Ancho, coriander, oregano, paprika, cayenne
What makes it special: It’s what we use on the roast pork for sandwiches, some heat, but not too much, originally meant for pork, does great on chicken and is my new go-to on a steak.

BBQ: Cumin, cayenne, tomato, sugar, smoked paprika
What makes it special: Tangy, spicy, and just sweet enough, perfect for any traditional BBQ needs.

Dub Rub: Habanero, allspice, thyme, mustard
What makes it special: Our spiciest rub by far. If you crave heat, then this is the rub for you.
