What are they? Beans picked from pods, which are not eaten, like chickpeas, fava beans, lima beans, black beans and cranberry beans. They can be fresh or dried.
What they taste like: Fresh: sweet and creamy. Dried: Starchy and meaty.
When you can find them: Briefly, in winter.
How to store: Choose slightly shriveled pods and refrigerate intact for three days.
Cooking tips: Cook in a pot with a sprig of rosemary or some sage leaves, a clove of garlic and water over very low heat until tender. Add a splash of good olive oil.
