What is it? Rainbow chard or Swiss chard are green leafy vegetables with leaf stalks that can be white, red, yellow or red and white.
What it tastes like: Young chard is mild and tender; more mature chard may have an earthy, slightly bitter flavor.
When you can find it: Late fall and winter.
How to store: Refrigerate unwashed in a plastic bag and store in the fridge.
Cooking tips: Use young chard in salads. For mature chard, separate leaves from stems and steam or boil (stems take longer to cook). Add to soups and stews. Sauté in olive oil with garlic.
