Spain’s treasured jamón ibérico is the center of attention at 13 South Florida restaurants during Miami Gastro Tour from Oct. 20 through Nov. 13. Hosted by Cinco Jotas, Spain’s leading brand of the ham made from acorn-fed, 100 percent ibérico pigs, the tour takes diners through tapas dishes celebrating Spanish foods.

Diners can sample dishes at $40 or less that showcase the delicacy, made in a process that has remained unchanged since 1879. After a precise amount of the ham’s fat is removed, the leg is buried in Atlantic sea salt and dried in the Cinco Jotas Jabugo caves to cure before being carved into thin slices.
