Chicken Caprese

Bocconcini are small bite-sized fresh mozzarella pieces – up to an inch in diameter. This recipe makes great use of leftover chicken.

In a mixing bowl, combine cubed chicken, tomatoes and mozzarella. Mix to incorporate, then divide onto 2 plates. Drizzle with store-bought basil oil.
