- 1½ cups cubed cooked chicken breast
- 1½ cups grape tomatoes, halved
- ¾ cups fresh bocconcini mozzarella, halved or quartered, depending on size
- Basil oil (Store-bought, or see recipe, left)
In a mixing bowl, combine cubed chicken, tomatoes and mozzarella. Mix to incorporate, then divide onto 2 plates. Drizzle with store-bought basil oil.
