Cream Cheese Frosting

This icing is not especially sweet, making it a good choice for a carrot cake. If you want it sweeter, just beat in more confectioner's sugar.

Ingredients

  • 1 stick (4 oz.) unsalted butter
  • 1 8-oz package Philadelphia cream cheese
  • Dash salt
  • 1 teaspoon vanilla
  • 2 cups confectioner's sugar, sifted

Instructions

Bring cream cheese and butter to room temperature. Beat together in a large mixing bowl until blended. Add vanilla and confectioner's sugar and beat until creamy and smooth. Fill and frost cakes. This is a soft frosting – if you add more sugar, it will be stiffer.
