Cucumber Dill Salad

Ingredients

  • 2 hothouse cucumbers or 3 regular cucumbers, sliced thi
  • 1 teaspoon kosher salt
  • 1 cup whole-milk Greek yogurt
  • 2 tablespoons chopped fresh dill, plus more for garnish
  • 2 garlic cloves, finely chopped
  • Freshly ground pepper
  • Juice of one lemon

About this recipe

Serves 4  Tzatziki and raita are among many variations of creamy cucumber salads. Improvise at will with herbs (mint and basil are good), spices (cayenne, cumin, turmeric and curry powder work well) and vegetables (thinly sliced red onion, scallions, cherry tomato halves, diced red pepper).

Instructions

Combine cucumbers and salt and drain in a colander for 30 minutes. Rinse and drain. Combine yogurt, dill, garlic, freshly ground pepper, lemon juice and additional salt to taste. Add cucumbers and serve. Serve promptly; the cucumbers will continue to shed liquid the longer the salad sits, making a more watery salad.
