Ginger Carrot Slaw

Crunchy carrot slaw makes a great salad or addition to sandwiches.

Ingredients

  • 2 tablespoons sesame oil
  • Juice from two limes
  • 2 tablespoons rice vinegar
  • 2 teaspoons sugar
  • ½ teaspoon sea salt
  • 1 2-inch knob fresh ginger, peeled and grated, with juice
  • 4-5 medium carrots, shredded, about 2 cups
  • 2 scallions, cut in thin rounds
  • 4 tablespoons toasted sesame seeds

Instructions

Whisk together sesame oil, lime juice, rice vinegar, sugar, salt and ginger. Combine with carrots, scallions and sesame seeds and mix well.
