Lychees freeze easily. Just place ripe, unpeeled fruit in a zip-top bag.
Ingredients
- 5 fresh or frozen peeled lychees or 10 longans, seeds removed, plus one or two for garnish
- Juice of half a lime
- 2 tablespoons simple syrup
- 2 oz. vodka
- Ice cubes
- Mint leaves

For a non-alcoholic version, omit vodka and top off with sparkling water.
