Mango Lime Gelato

Based on a classic Italian gelato recipe – which lets the fruit flavor shine brightly – this recipe highlights the flavor of mango, which varies greatly in sweetness and tartness. Adjust accordingly, adding more sugar syrup or lime as needed.

Ingredients

  • 1/2 cup sugar
  • 1/2 cup water
  • 2 large ripe mango, peeled, cut in chunks, abouts 2 cups
  • 3 tablespoons freshly squeezed lime juice
  • 1/2 cup heavy cream, well chilled

Instructions

First, make syrup. Bring sugar and water to boil, stirring until dissolved. Remove from heat and cool completely.

Combine mango, most of sugar syrup and lime juice in food processor and process until smooth. Taste and adjust sweetness by adding more syrup if needed, and tartness by adding more lime. Set aside. Beat heavy cream with a whisk just until it thickens enough to show beater marks. It should not be stiff. Fold in mango mixture, cover and refrigerate one hour.  Freeze in ice cream maker. Serve immediately or within a day.
