Moon Man Pie

This is Coconut Cream pie if you use Coco Loco, rum and sprinkle with coconut shavings; Brandy Alexander pie if you use cognac and creme de cacao and dust it with chocolate shavings, grasshopper pie if you use creme de menthe and creme de cacao, or coffee cream if you use Kahlua and creme de cacao – you get the picture. Garnish with more whipped cream, chopped nuts, fresh fruits or nothing at all. It's a tall, impressive pie and very easy to make. You just need ample freezer space. Make it the day before you plan to serve it.

We call it Moon Man Pie because we first made it 50 years ago when Neil Armstrong walked on the moon, and every time we make it, we remember that exciting summer night.

Ingredients

  • 1 9-inch chocolate wafer or graham cracker crumb crust
  • 1/4 cup milk
  • 12 oz miniature marshmallows
  • 1/4 cup creme de menthe
  • 3 tablespoons creme de cacao
  • 2 cups heavy whipping cream, chilled

Instructions

Make your favorite crumb crust and set aside to cool completely.

For filling, combine milk and marshmallows in a large pan and heat over low heat, stirring constantly, until fully melted. You can also place in a large bowl and microwave, stopping every few seconds to stir. Set aside to cool, stirring every now and then.

Add liqueurs and blend well. In a large, chilled bowl, beat whipped cream until soft peaks form. Fold marshmallow mixture into whipped cream. Chill until mixture mounds, then fill cooled crust. Cover with plastic wrap and freeze overnight.
