Radish Slaw with Dried Cranberries and Toasted Nuts

Use the colorful large watermelon radish or an assortment of smaller radishes. Make this ahead and let it marinate for 10 to 30 minutes.

Ingredients

SERVINGS: Serves 2
  • 1 medium to large watermelon radish, or 5-6 large radishes, cut into julienne slices about 1 inch in length
  • ½ cup dried cranberries
  • ½ cup toasted nuts, such as almond slices, walnut pieces, chopped hazelnuts or pecan halves
  • 3 tablespoons good quality extra-virgin olive oil
  • 2 tablespoons white balsamic vinegar
  • Sea salt to taste

Combine all ingredients and mix well.
