- 1 medium-sized head garlic
- 2 tablespoons red wine vinegar
- 2 teaspoons Dijon mustard
- ½ teaspoon kosher salt
- Freshly ground pepper to taste
- ½ cup olive oil
Preheat oven to 400°. Trim ¼ inch off the top of garlic head and drizzle with olive oil. Wrap in aluminum foil and roast until tender, about 35 minutes. Cool, then squeeze out the cloves. Combine all ingredients in a blender and pulse to combine; then run on low to incorporate.
