- ½ pound French-style green beans, such as haricots verts, rinsed, ends trimmed
- 1½ tablespoons olive oil
- Juice from 1 lemon, divided
- 1 teaspoon coarsely ground black pepper
- 1 tablespoon slivered raw almonds
Preheat oven to 350°. Place beans in a large bowl. Drizzle olive oil and half the lemon juice over beans; mix thoroughly to coat. Spread beans, in a single layer, onto a baking sheet. Sprinkle black pepper evenly over to season, then sprinkle almonds over beans. Roast for 20-25 minutes until cooked through and just starting to brown. Remove from oven and immediately sprinkle the reserved lemon juice over beans. Transfer to a plate and serve.
