Turkey Chili

Ingredients

  • 1 tablespoon olive oil
  • 2 lbs ground turkey
  • 2 onions, chopped
  • 4 cups water
  • 2 (28-ounce) cans crushed tomatoes
  • 2 (16-ounce) cans kidney beans – drained, rinsed, and mashed
  • 2 tablespoons garlic, minced
  • ¼ cup chili powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

This recipe is from the Carrollton Casserole Project and chosen to be simple enough for students to make at home in large quantities. They are hearty and protein-rich to nourish people in a homeless situation who may only have one meal a day.

Instructions

Heat the oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown. Stir in onion, and cook until tender.
Pour water into the pot. Mix in tomatoes, kidney beans, and garlic. Season chili powder, paprika, oregano, cayenne pepper, cumin, salt, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.
