Freddy’s Skirt Steak: Salt skirt steak and place on grill over high heat. After 5 minutes, flip, switching direction to get cross-hatch grill marks. Serve with chimichurri and pickled jalapeños.
On the menu: Grilled corn salad (esquites), smoked vegetables; roasted radishes; cauliflower dusted with porcini powder and rosemary, thyme, onion and garlic; brined grilled tongue; tortillas and Pacifico beer.
