Rías Baixas makes some of the world’s most elegant white wines. The wine region occupies a lush green corridor of northwest Spain on the cool, Atlantic coast, an area known as Galicia. Ample rainfall makes it tough to ripen reds but suits the white Albariño grape to perfection.

Local growers have mastered the art of growing their superstar varietal — the wines are crisp, light, and fresh, with hints of sea spray and minerality that pair beautifully with the seafood dishes of the region. A true people pleaser of a wine, Albariño is complex, aromatic and tasty, a perfect fit for the Miami food scene.

Beverage director Daniel Bishop of Fiola restaurant is one of the many sommelier fans of Albariño and is featuring them this month at the Coral Gables hot spot. Bishop “likes the freshness, acidity, and brightness of the wines, with the salinity and citrus notes.”

Pazo das Bruxas

100% Albariño, made in the southern O Rosal area with some grapes from the central Val do Salnés. Intensely aromatic with a dry, long finish on the palate. Fun fact: Pazo das Bruxas is named for “las bruxas,” or witches of the region who used dances and spells to ensure a fruitful harvest.

Paco & Lola

100% Albariño. Founded in 2005 with the slogan “exceptional wine for exceptional people,” Paco & Lola farms 500 acres of vineyards parceled out over 1,900 small holdings. Look for the wine’s signature bold polka dots and charming fruit-forward flavors to match.

Martín Codax

100% Albariño. Woman winemaker Katia Álvarez works with 300 grower-members of Martín Códax tending small family plots to source Albariño from multiple sub-areas of Rías Baixas. The result is a complex portrayal of the variety.
