Butternut squash

What is it? A large, pear-shaped light tan squash with orange flesh.
What it tastes like: Sweet and somewhat nutty, similar to pumpkin.
When you can find them: Winter squashes grow in South Florida in the fall, winter and spring.
How to use and store: Keep whole squash in a cool, dry place. Refrigerate cut pieces.
Cooking tips: Cut in half lengthwise and scoop out seeds. Add 1 teaspoon coconut or olive oil and sprinkle lightly with cinnamon. Roast for 60 minutes until tender.
