What is it? Like a big head of lettuce, cabbage comes in different colors and textures. Some types of cabbage have looser, wrinkly leaves, like Chinese cabbage.
What it tastes like: Crunchy and a little peppery or bitter when raw, and sweeter and milder when cooked.
When you can find it: Cabbage grows in South Florida in the winter and spring.
How to use and store: Refrigerate. cooking tips: Shred raw cabbage to make coleslaw and add to salads. Steam or boil leaves and stuff with brown rice cooked with vegetables. Add to stir-fries. Cabbage is fermented to make kimchi and sauerkraut.
