Estancia Pantry and Yeastie Boys Bread Company Micro Bakery
When his family stopped hosting events at Estancia Culinaria, their 15-acre farmstead in the Redland, Santi Gabino wondered what his next act would be. It didn’t take him long to figure out that it would involve baking. “My now-famous wedding day cookies are something I’ve been making since I was 13,” he says. “I’ve estimated I’ve made around 13,000 of those cookies in my lifetime.” But it’s bread that he decided to focus on. “Bread is biblical, communal, nutritious, adaptable and, above all, comforting,” he says.
Under Florida’s cottage food law, Gabino, a self-taught baker, started making rustic loaves, plus jams made from local ingredients and spreading the word via social media. Customers can order by noon and pick up their bread at his home by 5pm the next day. It gives him a chance to get to know them, Gabino says. “Often, people open up and tell me about their day or challenges they may be facing. Homemade bread makes this possible.”
