When Norma Anduray was growing up in Honduras, she made mud cakes under the mango tree. Today, she and her husband, Giovany Garcia, bake quick breads using tropical fruits – banana, mango and coconut – that they sell at farmers markets and retailers.
Anduray hadn’t envisioned a career in baking until one day, “God told me to make banana bread.” They launched their family business, starting under Florida’s cottage industry laws, then moving to a commercial kitchen. Extra loaves go to the Coalition of Florida Farmworkers (COFFO). “These people work our land,” she says. “We bring bread to support them.”
