Kale

What is it? A dark-green, leafy vegetable with large, wrinkly leaves. Different varieties include dinosaur kale, lacinato kale, red Russian kale, among others.
What it tastes like: Cabbage-y, earthy, sweet and sometimes slightly bitter.
When you can find it: Kale grows in South Florida in the winter, spring and early summer.
How to use and store: Refrigerate leaves.
Cooking tips: One of the so-called “superfoods” because it’s rich in calcium, iron and vitamins, kale leaves are good in salads (but you may need to massage tough leaves before chopping). Chop kale and add to soups and stews.
