What is it? An unusual-looking root vegetable with edible greens. It can be pale green or purple.
What it tastes like: Mild, slightly sweet, crunchy and juicy.
When you can find it: Kohlrabi grows in South Florida in the winter and spring.
How to use and store: If there are greens, cut them off, refrigerate and use within a few days. The bulbous stems keep for up to two weeks.
Cooking tips: Blanch leaves, then use in stir-fries or add to soups or stews. Peel kohlrabis and slice to serve raw. Cube peeled kohlrabis, steam or boil and mash like potatoes. Shred to make cole slaw.
