Pizza Napoletana
The popularity of the Neapolitan pizza in South Florida just keeps growing. This authentic product is as simple as it gets: a personal-size pizza, charred on the edges, soft in the middle, dotted with creamy mozzarella, tomato and some basil leaves, cooked for a minute and a half. These pizzas are best eaten right out of the oven – even 10 minutes delivery time can leave the crust chewy and gummy. True Neapolitan pizza is TSG (Traditional Specialties Guaranteed) and must follow specifications outlined by the Italian government document. “The pizza should be soft, elastic and easily foldable into a ‘booklet.’” To be certified as Vera Pizza Napoletana, pizzas must be cooked in wood-burning dome ovens operating at about 800 degrees and bake for no longer than 90 seconds. They are made with Tipo 00 flour, San Marzano tomatoes, Fior di Latte or bufala mozzarella, fresh basil, salt and yeast. The dough must be shaped by hand – no dough press or rolling pin allowed.
Classic Pizza
This traditional pizza is made with a thin crust, in a wood-fired oven, and topped with simple ingredients: a thin smear of tomato sauce, cheese, a few other ingredients depending on what you order. Traditional choices include:
• Margherita: tomato, sliced mozzarella, basil and extra-virgin olive oil
• Quattro formaggi: mozzarella, stracchino, fontina and gorgonzola
• Quattro stagione: Four seasons, each quarter topped with different ingredients
