Pattypan & Eight-ball Squash

Pattypan squash

What are they? Summer squashes like zucchini, but in different shapes. Pattypan squash resembles a flying saucer.
What they taste like: Very mild in flavor, with a high moisture content.
When you can find them: Summer squashes grow in South Florida in the fall, winter and spring.
How to use and store: Wash and scrub skins thoroughly before using. Store unwashed squash wrapped in a paper towel inside a plastic bag in the refrigerator.
Cooking tips: Cut into chunks, toss with olive oil, fresh thyme and a little salt and roast. Cut the top off pattypan squash, scoop out the insides, and bake until tender. Crack an egg inside and bake 15 minutes, until egg is set.
