What are they? Winter squashes with hard rinds that come in different sizes and colors: orange, green, yellow, pale beige, even blue. Inside, there’s deep orange flesh with fiber and seeds.
What they taste like: Sweet, sometimes slightly nutty.
When you can find them: Winter squashes grow in South Florida nearly year-round.
How to use and store: Keep whole squashes in a dry, cool place. Refrigerate once you’ve cut into them.
Cooking tips: Peel and seed calabaza and cut into chunks. Toss with olive oil, salt and pepper and roast on a cookie sheet for 35-45 minutes until tender. Add peeled and seeded pumpkin or calabaza chunks to chicken soup.
