What are they? Bush or snap beans grow on a bush. Pole beans grow on a trellis. They can be green or pale yellow (wax beans); long varieties can be green, deep red or purple.
What they taste like: Fresh, crunchy, delicious when young and raw.
When you can find them: Winter and spring.
How to store: Refrigerate until ready to use.
Cooking tips: Stir-fry quickly in a little olive oil over high heat and add garlic and grated ginger. Steam quickly and toss with olive oil and lemon juice.
