Spaghetti Squash
What is it? A winter squash with hard flesh that resembles spaghetti once it’s cooked.
What it tastes like: Very mild, but when cooked and served with sauce, tastes like a healthier version of pasta.
When you can find it: Spaghetti squashes grow in South Florida in the winter and spring.
How to use and store: Bake as described below. Store whole squash in a cool, dry place.
Cooking tips: Using a sharp knife and holding the whole squash with a towel, cut in half lengthwise – because the squash is so hard, only cut through to the center and turn around and cut through from the other side. Scoop out the seeds and rub olive oil on the outside and inside. Place cut side down on a baking sheet and roast at 400 degrees for about 45 minutes. Use a fork to scrape out “spaghetti” and serve with your favorite sauce.
