Yuca

What is it? Also known as cassava, yuca has long, woody roots with firm white flesh.
What it tastes like: When cooked, yuca becomes translucent and sticky, mild in flavor, slightly potato-like.
When you can find it: Year-round.
How to store it: Keep in the refrigerator for 2-3 weeks.
Cooking tips: Yuca must be cooked before eating. Add mojo sauce (garlic sauce) to boiled yuca chunks. You can also add yuca to chicken soup.
