Zucchini, Crookneck & Yellow Squash
What are they? All members of the same family (Cucurbitaceae), these summer squashes have thin, edible skin and seeds, with tender flesh.
What they taste like: Very mild in flavor, with a high moisture content.
When you can find them: Summer squashes grow in South Florida in the fall, winter and spring.
How to use and store: Wash and scrub skins thoroughly before using. Store unwashed squash wrapped in a paper towel inside a plastic bag in the refrigerator.
Cooking tips: Slice young squash and add raw to salads. Stir-fry in olive oil with garlic, fresh herbs and diced tomato just until cooked through. Cut in lengthwise strips, brush lightly with olive oil and grill.
