Why We Love It: Dragon fruit, also known as pitaya, is the fruit of several vining cactus species in the Hylocereus genus. Dramatic-looking, with pale green or yellow shoots and leathery pink or yellow skin, dragon fruit has juicy magenta or white flesh dotted with crunchy black seeds, adding color and texture to salads, sorbets and smoothies. The flavor is sweet, mild and refreshing, similar to watermelon. Cut in half and eat with a spoon.

Find dragon fruit: The season runs June-November. They’re carried in farmers markets, roadside stands and some supermarkets.
