Fresh Strawberry and Cream Cupcakes

These fluffy cupcakes are filled with fresh strawberries and topped with a luscious creamy frosting. From Florida Dairy Farmers.
Course Dessert

Ingredients
  

CUPCAKES

  • cups all-purpose flour
  • ¾ cup sugar
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ½ cup whole milk
  • 1/3 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup diced fresh strawberries

FROSTING

  • 1 cup whole milk
  • cups powdered sugar
  • ¼ teaspoon lemon extract

Instructions
 

  • Preheat oven to 400F. Line a muffin pan with cupcake liners. In a bowl, combine the flour, baking powder, and salt. In another bowl, mix the melted butter, egg, and milk along with the vanilla extract. Gently combine the two mixtures. Toss strawberries in 2 tablespoons flour
  • Fold into batter. Divide evenly between 12 cupcake tins. Bake 20-25 minutes

FOR FROSTING:

  • Whisk milk, confectioner’s sugar and lemon extract until smooth and drizzle over cooled cupcakes.
