
Fresh Strawberry and Cream Cupcakes
These fluffy cupcakes are filled with fresh strawberries and topped with a luscious creamy frosting. From Florida Dairy Farmers.

Ingredients
CUPCAKES
- 1½ cups all-purpose flour
- ¾ cup sugar
- ½ teaspoon salt
- 2 teaspoons baking powder
- ½ cup whole milk
- 1/3 cup butter, melted
- 1 teaspoon vanilla extract
- 1 egg
- 1 cup diced fresh strawberries
FROSTING
- 1 cup whole milk
- 3½ cups powdered sugar
- ¼ teaspoon lemon extract
Instructions
- Preheat oven to 400F. Line a muffin pan with cupcake liners. In a bowl, combine the flour, baking powder, and salt. In another bowl, mix the melted butter, egg, and milk along with the vanilla extract. Gently combine the two mixtures. Toss strawberries in 2 tablespoons flour
- Fold into batter. Divide evenly between 12 cupcake tins. Bake 20-25 minutes
FOR FROSTING:
- Whisk milk, confectioner’s sugar and lemon extract until smooth and drizzle over cooled cupcakes.
