
Avocado Chicken Salad with Wasabi Mayo
This is a good use for leftover rotisserie chicken. Find Japanese wasabi mayonnaise in Asian markets, or substitute regular mayo with prepared horseradish to taste.

Ingredients
- 2 cups cooked chicken, cut into large dice
- 3 scallions, sliced ¼-inch thick, green and white parts
- 1 large ripe Florida avocado, flesh cut into ½-inch cubes
- ¼ cup wasabi mayonnaise
- Lettuce leaves for serving
- Black sesame seeds
Instructions
- Gently combine all ingredients and mix well. Serve atop lettuce leaves and top with black sesame seeds.
