
Avocado, Red Onion, Radishes, Parsley

Ingredients
- 1½ lbs. ripe avocado, cut in slices
- ½ medium red onion, sliced thin and soaked in ice water for 15 minutes
- 1 bunch radishes, trimmed, sliced ⅛-in thick
- ½ cup flat-leaf parsley, chopped
Vinaigrette
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons red wine vinegar
- ½ teaspoon sea salt
- Freshly ground black pepper
Instructions
- For vinaigrette, whisk together all ingredients. To assemble salad, arrange avocado slices on plate. Top with onion and radish slices. Sprinkle with parsley. Pour dressing over and serve.
Notes
Serves 4 Soaking the onion first tames their raw bite.
