Prep Time 15 minutes

Ingredients
  

  • 1½ lbs. ripe avocado, cut in slices
  • ½ medium red onion, sliced thin and soaked in ice water for 15 minutes
  • 1 bunch radishes, trimmed, sliced ⅛-in thick
  • ½ cup flat-leaf parsley, chopped

Vinaigrette

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • ½ teaspoon sea salt
  • Freshly ground black pepper

Instructions
 

  • For vinaigrette, whisk together all ingredients. To assemble salad, arrange avocado slices on plate. Top with onion and radish slices. Sprinkle with parsley. Pour dressing over and serve.

Notes

Serves 4  Soaking the onion first tames their raw bite.
