
Cucumber Raita Salad
Indian raitas are cooling yogurt-based accompaniments to spicy dishes. This recipe uses more vegetables than yogurt so it can be used as a refreshing salad.
Ingredients
- 2 hothouse cucumbers, peeled and diced
- 1 carrot, peeled and grated
- 1/4 teaspoon ground cumin
- 1/8 teaspoon cayenne
- 1/4 teaspoon salt
- 8 ounces whole-milk Greek yogurt
- 3 tablespoons mint leaves, chopped
Instructions
- In a large bowl, whisk yogurt until creamy. Add vegetables and spices and mix well. Taste for seasoning.
