Cucumber Raita Salad

Cucumber Raita Salad

Indian raitas are cooling yogurt-based accompaniments to spicy dishes. This recipe uses more vegetables than yogurt so it can be used as a refreshing salad.

Ingredients
  

  • 2 hothouse cucumbers, peeled and diced
  • 1 carrot, peeled and grated
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon cayenne
  • 1/4 teaspoon salt
  • 8 ounces whole-milk Greek yogurt
  • 3 tablespoons mint leaves, chopped

Instructions
 

  • In a large bowl, whisk yogurt until creamy. Add vegetables and spices and mix well. Taste for seasoning.
