
Grilled Corn and Cheese
Ingredients
- Fresh corn on the cob, husked
- Olive oil
- Chopped cilantro
- Freshly ground pepper
- Cayenne pepper (optional)
- Salty cheese: crumbled cotija, feta or gorgonzola, or grated Parmesan
Instructions
- Lightly brush corn on the cob with olive oil. Grill until slightly charred, turning constantly. (It’s OK if some of the kernels are barely cooked.) Use a sharp knife to cut off kernels into a large bowl. Toss with cilantro, pepper and cheese.
