Jerk Mustard Greens

This recipe from EatWell Exchange is a healthy version of a cultural favorite. Related to collards and kale, mustard greens are peppery with a little kick.
 

Ingredients
  

  • 1 tablespoon olive oil
  • ¼ cup yellow or purple onion, diced
  • 5-6 cups chopped mustard greens
  • ½ cup low-sodium chicken broth
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon garlic powder
  • 2 teaspoons dry jerk seasoning
  • Dash of salt and pepper

Instructions
 

  • Heat olive oil in pan over medium heat. Add onion and cook until slightly soft. Add mustard greens, broth and apple cider vinegar. As greens decrease in size, add garlic powder and dry jerk seasoning. Cook about 5-10 minutes, or until soft. Season with a dash of salt and pepper.

Notes

Serves 6  In the brassica family, mustard greens are rich in vitamins A, C and K, and they’re in the brassica family.
