Lion’s Mane Mushroom “Crab” Cakes

Ingredients
  

  • 1/2 lb lion’s mane mushroom
  • 1 egg, lightly beaten
  • 2 tablespoons mayonnaise
  • 3 scallions, white and green parts, chopped (save some green scallions for garnish)
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon Old Bay seasoning
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper, if desired
  • 1/2 cup panko
  • Vegetable oil for frying
  • Lemon wedges for garnish
  • Tartar sauce

Instructions
 

  • Steam mushrooms for about 8-10 minutes. Remove to a bowl. When cool enough to handle, shred into small pieces like crab flakes. In another bowl, combine egg, mayonnaise, chopped scallions, Worcestershire sauce, Old Bay, salt and cayenne pepper. Mix in mushrooms. Add panko and combine. Form into four round patties about 3.4-inch thick.
    Heat oil on medium heat. Cook patties for about 3 minutes on each side, until golden brown and cooked through. Serve immediately with lemon wedges and scallions.

Notes

Makes 4  The texture of lion's mane mushrooms is flaky and juicy, like crab. To make this vegan, use egg substitute, vegan mayonnaise and soy sauce.
