Mango Cardamom Bread

Cardamom gives this bread a spicy richness.

Ingredients
  

  • 3-4 ripe mangos
  • 8 oz. butter, divided (use 1 ounce to butter pan)
  • 1 cup white sugar
  • 1 cup light brown sugar
  • 2 cups unbleached flour
  • ¾ teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • ¾ teaspoon ground cardamom
  • 3 eggs

Instructions
 

  • Preheat oven to 350 degrees. Butter a 9x5" loaf pan. Peel and pit mangos. Mash half and cut remaining mangos in ½-inch dice and combine. You should have 2 cups total of puree and chopped mangos. Melt butter and set aside to cool. Combine sugar and flour in a large bowl. Add baking soda, salt, baking powder and cardamom to flour, using a strainer to be sure there are no lumps. Beat eggs until mixed and add to melted butter. Add eggs, butter and mango to dry ingredients and mix, using a large wooden spoon, just until well combined. Pour into prepared pan. Bake for 1 hour 15 minutes. Cool in pan for 20 minutes, then turn onto rack and cool completely.

Notes

Makes 1 loaf  Use very ripe mangos for best results in this Indian-spiced quick bread.
