Mary Lang's Grapefruit Pie

In the heart of Central Florida's citrus country, The Taste of Florida Cafe in Haines City serves up dishes made from family recipes, including their famous grapefruit pie, a recipe taken to Japan by the Florida Department of Citrus and featured on the Food Network.

Ingredients
  

  • 1 graham cracker crust
  • 2 large or 3 medium red Lang grapefruit, sectioned
  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 1½ cups water
  • 1 3oz package strawberry flavored gelatin
  • 1 8-oz container frozen nondairy whipped topping, thawed

Instructions
 

  • Arrange grapefruit sections in graham cracker crust. Set aside. In a medium saucepan, combine sugar and cornstarch. Add water and cook over medium heat until thick and clear. Add gelatin and stir to dissolve. Let cool slightly. Pour gelatin over grapefruit sections in crust. Refrigerate until firm. Top with whipped topping.

Notes

Serves 8  Juicy sections of red grapefruit are suspended in strawberry gelatin in a graham-cracker crust. Caterer Gail Beckham made this pie for us. Recipe used with permission by Lang’s Taste of Florida Café.
