Modern Art Cheese Balls

These colorful cheese balls aren’t just for special occasions. They’re shockingly easy and fun to make. Use plain goat or cream cheese for spreading on crackers, or flavor by mixing with other cheeses (bleu or Roquefort with garlic, for example). Make individual balls for a bagel brunch. You can shape as disks, round balls, tubes or any shape you want.

Ingredients
  

  • 8 oz. fresh goat cheese or cream cheese
  • Edible flowers for decoration (see tips on using)
  • Vegetables and herbs for decoration:
  • Carrots and cucumbers peeled in long strips lengthwise (use a Y-shaped peeler)
  • Chives or scallions (cut latter in long narrow strips)
  • Olives, pitted and cut in half or quarters
  • Mini sweet peppers, de-seeded, cut in thin strips or rounds
  • Fresh dill, parsley or other herbs
  • Crackers, bagels, pita bread wedges

Instructions
 

  • Divide cheese in as many pieces as you want to serve. For each, lay out a piece of plastic wrap. Arrange strips of vegetables, flowers and herbs randomly or in a pattern, covering an area roughly 3-6 inches. Use your hands to form the piece of cheese in the rough shape you want and lay atop the strips. Pull up the corners of the plastic wrap and tighten all around, then mold into the final shape you want. Refrigerate and remove plastic wrap before serving.
