Roasted carrot hummus

Roasted Carrot Hummus

Roasted carrots add color and flavor to hummus, a tasty and healthy appetizer, accompaniment for lunch or dinner and anytime snack.

Ingredients
  

  • 3-4 carrots, trimmed and scrubbed but left whole
  • 2 tablespoons extra-virgin olive oil, divided
  • 10 oz. store-bought or homemade hummus

Instructions
 

  • Preheat oven to 400 degrees. Pour 1 tablespoon olive oil in a baking pan and add carrots, covering them with oil. Bake about 30 mins, turning occasionally, until fully roasted. Let cool to room temperature. Add carrots and remaining tablespoon of olive oil to food processor and blend until smooth. Stir into hummus and taste for seasonings.

Notes

Serves 4-6 as a dip  We made Mike Solomonov’s Hummus Tehina (find the recipe on below) because it’s so delicious, but store-bought hummus will work, too.
