Silver Dollar Buckwheat Pancakes

Dining on the train was once a dress-up affair, with multi-course meals and crisply starched napkins.

Ingredients
  

  • ¾ cup buckwheat flour
  • ¼ cup unbleached all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • 1 egg
  • 1 cup whole milk
  • 2 tablespoons butter, melted
  • Vegetable oil for griddle
  • Maple syrup, honey, blueberries or other fresh fruit

Instructions
 

  • Combine dry ingredients. In a separate bowl, whisk together egg, milk and melted butter. Add to dry ingredients and whisk to blend. Heat skillet and lightly oil. Pour about 2 tablespoons of batter on skillet to make each pancake. When edges are dry and bubbles appear on the pancake, flip and cook until golden brown. Repeat with remaining batter. Serve immediately with syrup, honey and fresh fruits, if desired.

Notes

Train menus featured lots of breakfast dishes: French toast, fruit compotes and a variety of pancakes, like silver-dollar pancakes to stack high and douse with lots of syrup. This recipes serves 4.
