Spiral Restaurant Miso Dressing

In the 1970s and 1980s, this Spiral Restaurant in Coral Gables – then considerred a "health food" restaurant – served a house salad packed with veggies – raw squash, greens, carrots and more – but it was this dressing that everyone craved.

Ingredients
  

  • 1/4 medium onion, finely chopped
  • 1/4 cup apple cider vinegar
  • 2 cups soybean oil
  • 3/4 cup water
  • 1/4 cup tamari
  • 3/4 cup white miso
  • 1 tbsp. honey

Instructions
 

  • Process the onion and vinegar in a blender or food processor until smooth. Add remaining ingredients and blend for 4 minutes. Best made 24 hours in advance.

Notes

MAKES 4 CUPS  Creamy, tangy and packed with umami from white miso. It also makes a great dip for a crudité platter.
