and Onion Salad

When local heirloom tomatoes are in season, here's a simple way to enjoy them.

Ingredients
  

  • Ripe, round heirloom tomatoes (choose varieties that are more fleshy than juicy)
  • Sweet onions
  • Sea salt
  • Extra-virgin olive oil (optional)

Instructions
 

  • Peel the onion, cut off the root end, and slice paper-thin rounds. Do the same with tomatoes. Arrange on a plate and sprinkle with salt and drizzle with olive oil if you want.

Notes

This recipe requires nothing but good tomatoes, local sweet onions and a sharp knife. Serve with crusty bread.
