Avocado Brownies

 You won’t taste avocado in these cake-like brownies, but they add moisture and richness without added fat.

Ingredients

  • ½ cup unbleached flour
  • ½ cup cocoa powder (we used Ghirardelli)
  • ½ teaspoon salt
  • 3 eggs
  • 1 cup light brown sugar
  • 1 ripe medium Florida avocado (13-16 oz), peeled and pit removed, blended until smooth. You should have about 1 cup of pureed avocado
  • 1 tablespoon Kahlua or dark rum
  • 1 cup walnuts or pecans, chopped (optional)
  • Your favorite chocolate icing, if desired

Instructions

Line an 8x8” pan with parchment paper and spray with cooking spray. Preheat oven to 350 degrees.

Combine flour, cocoa powder and salt. In a mixing bowl, combine eggs and brown sugar. Use a mixer or whisk to beat until slightly thickened, about three minutes. Sift in flour mixture and blend gently until combined. Mix in avocado, Kahlua or dark rum and optional chopped nuts. Turn into baking pan. Bake for 25-30 minutes. Let cool completely. Cover with wire rack and invert; peel off paper, then invert again onto cutting board. Use a sharp knife to cut into 9-12 bars.
