Beer-Marinated Hot Wings

Look for a pale ale with citrus notes for these hot wings.

Ingredients

SERVINGS: Serves 8 as main course, 12 as appetizer
  • 3 lbs chicken wings
  • 1 12-oz. bottle IPA
  • 1 tablespoon canola oil
  • 2 tablespoons soy sauce
  • 2 tablespoons local honey
  • 2 cloves garlic, minced
  • 1 teaspoon ground pepper
  • 1 teaspoon cayenne pepper (or to taste)
  • 1 teaspoon salt
  • ¼ lemon, squeezed
  • ¼ cup sriracha
  • Cilantro or scallions, chopped

Instructions

Cut off chicken wing tips and discard. Cut wing at the joint. Combine beer, oil, soy sauce, honey, pepper in a large glass bowl. Set aside ½ cup of marinade for later use. Add wings to remaining marinade and toss. Cover, and marinate in the refrigerator for 1 hour. Preheat oven to 425 degrees. Set a rack atop a baking sheet and place wings on rack. Bake 10 minutes. Meanwhile, combine salt, lemon juice, sriracha, honey and reserved marinade in small saucepan. Bring to boil and reduce until syrupy. Set aside. After 10 minutes, brush reserved marinade on wings. Return to oven and cook another 10-15 minutes, or until done. Toss with remaining marinade, garnish with chopped cilantro or scallions and serve.
