Ingredients
- Fresh corn on the cob, husked
- Olive oil
- Chopped cilantro
- Freshly ground pepper
- Cayenne pepper (optional)
- Salty cheese: crumbled cotija, feta or gorgonzola, or grated Parmesan
Instructions
Lightly brush corn on the cob with olive oil. Grill until slightly charred, turning constantly. (It’s OK if some of the kernels are barely cooked.) Use a sharp knife to cut off kernels into a large bowl. Toss with cilantro, pepper and cheese.
