Oranges in Rum, Cuban Style

Ingredients

  • 6 large seedless oranges
  • 2 tablespoons sugar
  • ¼ cup dark rum
  • ⅛ cup guava jelly, red currant jelly, or marmalade

Makes 4 to 6 portions  In Havana, each portion is topped with a few small pieces of guava paste.

Instructions

Peel and section the oranges. Place the sections in a wide bowl. Sprinkle with the sugar and rum. Turn gently to mix and let stand for about 1 hour, turning occasionally. Drain the fruit and reserve the syrup.

In a small pan over moderate heat, stir the jelly or marmalade to soften. When smooth, mix it with the reserved syrup and pour over the orange sections. Cover and refrigerate, stirring occasionally.

Serve in large brandy snifters or wine glasses that have been in the freezer for about ½ hour. Serve quickly, while glasses are still frosty.
